- Rinse sink in the middle (empty)
- soda nozzle drain (black tube) should lead to this sink
- Sanitizing sink on the right
- the sanitizer is located under the table next to the dishwasher
- Empty drip tray beginning and end of shift

Juices
Our current selection of juices includes lemon, lime, and ginger. The lime juice gets ran through the quickest, so it is important to have lots of it ready to go.
- if you have spare time during a shift (especially during slow season), you can work on getting the limes or lemons juiced.
- always use a strainer when juicing the lime and lemon to prevent pulp from making it into the batches
- ginger juice is made via blender. cut up the ginger into smaller pieces to aid the blending process with water. after blending, strain using the cloth strainer or any other fine strainer we have.
Batching
Some of the drinks we sell require batching, such as the Shogun, Mango Sticky Rice, Frozen Lychee Margarita, and Melon Calpico Slush.
Inventory
We need to ensure we have enough of the components to our drinks so that we do not risk selling out a product during open.
